Spaghetti with Garlic & Herb Ground Chicken

I whipped up this delicious dish last night and it was a huge hit! If you know me, you know I love cooking healthy yet practical meals for my family. That means meals that are nutrient-packed, balanced, and relatively easy to prepare.

If you're like me, I tend to cook "off the cuff" so here's a rundown of this lean-protein based, whole wheat spaghetti dish!


1 pack whole wheat spaghetti

8 cups water

1 lb. ground organic chicken breast

6 large cloves of garlic

1 small red onion

1 cup olive oil

1 tablespoon ghee

1 tablespoon salt (or salt to taste)

1 teaspoon black pepper

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder


Bring a large pot of water to boil. As you wait, sauté garlic and onion in a large saucepan with 1/2 cup of olive oil. As they begin to brown (about 5 minutes), add the ground chicken to the saucepan with the other 1/2 cup of olive oil, salt and pepper. Sauté everything together in the saucepan over medium heat. As the chicken begins to cook through and brown slightly (about 10 minutes), add the dried basil, dried oregano, and garlic powder to the mix and stir. Once the chicken is fully cooked, take a taste and add salt, pepper, and/or garlic powder if you feel you'd like more of anything. Simmer on low while you strain the spaghetti. As the spaghetti strains in the colander, add the ghee to the large pot and let it melt (no need to turn the burner on again). Return spaghetti to the pot and toss, coating spaghetti with ghee. Immediately add the sautéed chicken mixture to the pasta and toss evenly.

Garnish with Parmesan cheese and serve with a side salad and/or steamed or sautéed vegetables. Enjoy!
