Coconut-Sugar Strawberry Lemonade
Hi guys! I hope you all had a lovely weekend! We had some amazing weather here in the Wine Country. How was the weather where you are?
The coconut-sugar strawberry lemonade I made this weekend was such a hit that I thought I'd share the simple recipe here. [Now, I like a tart lemonade so I used less sugar than some might use as well as more lemon juice. If you like a sweeter lemonade, use 3/4 cups of coconut sugar and only 1 cup of lemon juice.]
1/2 cup of organic coconut sugar
1 cup water (for simple syrup)
2 cups freshly squeezed lemon juice (six lemons from our tree)
1 cup blended strawberries (about 10 strawberries)
4 cups water (to dilute)
First, we picked the lemons from our tree, squeezed them, and set the juice aside. Then I blended the strawberries. In a small saucepan, I combined the coconut sugar and the 1 cup of water and heated it on low until the sugar dissolved (about 5 minutes). In a large pitcher, I added the lemon juice, strawberry pureé, the simple syrup we just created, and the 4 cups of cold water (to dilute). Then simply add ice and serve!
